The veggies are all shredded and ready to toss in the freezer for the animals. I flash froze some extra peppers I had from the garden and then tossed them into a ziplock bag to use this winter in soups and stews and sauces. I even froze some herbs because it kills me when I have to buy them in the winter. Simply collect some of your favorite herbs, I did parsley, sage, rosemary and bay leaf, then pick off the leaves and roll them tightly into a log in a quart bag, secure with a rubber band and freeze! Or if you get lazy and start to run out of steam like I did, then flash freeze them whole and then freeze in baggies. This method works best with the woody stemmed herbs like rosemary and bay leaf. Phew!!
