The votes for this recipe were overwhelming. Here it is as promised. This Orange Cake was totally delicious and definitely full of flavour. The orange came through and I enjoyed this with my cuppa! Its pretty simple to prepare and hassle free! Here goes the recipe; ***Ingredients*** 350g Self-raising flour 150g Castor sugar 100g butter/margarine, cubed 3 eggs 1 tsp baking powder 3 tsp finely grated orange rind 375ml orange crush/ orange juice 1 tsp orange essence ***Quick Instructions*** 1. Gather ingredients together. Preheat oven to 180 degrees Celsius. 2. Lightly grease your baking tin with margarine and lightly dust it with flour. 3. Put sugar in bowl. Sift flour and baking powder into the bowl with sugar. Mix until evenly incorporated. 4. Add cubed butter/margarine. Rub in until a course-fine crumbly mixture is formed. 5. Add the rest of the ingredients (in no particular order). These are your eggs, rind, essence and orange crush.juice. 6. Mix with wooden spoon until just combined, taking care not to over-mix. Over-mixing will result in a tough textured cake. 7. Pour your batter into the greased cake tin. Bake in preheat oven for 35-40 min or until skewer comes out clean. Allow to cool on a cooling rack before attempting to cut it or take it out of the tin! Store in an airtight container.
