There is something immensely satisfying to me about taking a seed, sticking it in dirt, nurturing it, watching it grow and… then… miracles of miracles… it becomes something you can eat. My carrot crop did exceptionally well this year. (I’m a novice gardener so, suffice to say, I was well pleased!) I can’t express just how happy I am to know that the carrots I grew are not genetically modified. Organic yumminess! For those who don’t know, genetically modified foods (GMO) are designed to “prohibit” the eating of said genetically modified foods by critters by sticking stuff in there that makes their stomachs explode. Yep! So, one needs to consider what that might mean for out guts… GMO = really bad. Organic = really good! I’ll add that the creator of GMO (Monsanto) doesn’t serve GMO produce in their cafeteria. Nope. They only serve wholesome, ORGANIC foods. Doubt me? Research it. They know its crap. THIS (and lots of other reasons) is why I’m learning to grow my own food. What I don’t grow, I buy organic. Expensive? Yes. It’s designed that way. They don’t want you buying healthy stuff and so they charge all kinds of ridiculous “licensing” fees to organic farmers and the cost gets passed on to the consumer. (So long as you keep buying the cheap stuff, you feed into their system. If you buy organic, the prices will come down. ;-) ) Anyway…. My carrot crop did unbelievably well so today I harvested much of them. I cleaned, peeled and sliced and then canned them. (AND the water I used, I FILTERED TO RID IT OF THE FLUORIDE and other toxic chemicals that is a given from the city water in Hendersonville, NC.) Oh such GLORY!!! I’ll feed our son and myself yummy, wholesome, homegrown goodness… Canned with chemical-free water…. The peeled remnants will go into the compost bin and help to provide amazing nutrients for next year’s veggie crops. (Not a bit goes to waste!) I’m so thankful that God provides for our family. I’m thankful that He’s woken me up to the realities of our world and that I’m learning about His warnings and.... Im thankful for Joseph and his preparation and what its taught me. “A prudent man foreseeth the evil, and hideth himself; but the simple pass on, and are punished.” Proverbs 27:12 I’m not hiding….
