Theres a beautiful moment when your roux turns the right color & its aroma feels the house that makes you smile. It changes flour and oil into love. When my grandma would make her roux, shed give me the task of stirring until it reached the point where she took over and added everything else. I use to whine saying, I wanna make gumbo like you, not just stir. Shed always say, you are doing the most important part. I miss her and her gumbo dearly. Later on in life, I learned it was the tlc of stirring the roux til it reached that perfect color & smell. It truly is a dish of love.
