These are good things to read before one decides to go into the culinary field… If it werent for schools trying to get people in, theyd actually send potential students home with this list and told to read books about chefs like Anthony Bourdains Kitchen Confidential. If you can stand the idea that the world is not a glamours one (as portrayed on food networks) and are willing to work very hard… then by all means sign up for school… Personally, I have this need to stay in this field… even if I feel burned out some days… because I find that within hours, I am looking for ideas and information that will make me better at what I do… Knocked down, I get back up… Fired? I figure that its just that place and I should take what I know and move on to do better tomorrow… Driven is the word Im looking for… I belong in this field.
