These burgers are to die for, the flavors are so delicious!! Chicken Burgers With Tomato Relish Serves 4 Ingredients: 1 Pound Extra Lean Ground Chicken 1 Egg 1/3 Cup Fresh Whole Grain Bread Crumbs 1 Teaspoon Basil 1 Teaspoon Oregano 2 Tablespoons Water ¼ Teaspoon Salt 1 Pinch Pepper Tomato Relish: 2 Plum Tomatoes, finely diced ¼ Cup Red Onion, finely diced ¼ Cup Parsley, minced 1 Jalapeno Pepper, finely diced 1 Tablespoon Apple Cider Vinegar ½ Teaspoon Coriander Seeds, crushed ½ Teaspoon Mustard Seeds, crushed ¼ Teaspoon Salt 1 Pinch Pepper Directions: In a bowl, beat together egg, bread crumbs, basil, oregano, water, salt & pepper. Add chicken & mix well. With wet hands, divide into quarters; form into 4 patties, each about ½” thick. You can make ahead, cover & refrigerate for up to 4 hours or wrap individually in plastic wrap & freeze in airtight container for up to two weeks. Place burgers on greased grill over medium-high heat; close lid & grill, turning once, until no longer pink inside & digital thermometer reads 185°, about 15 minutes. Tomato Relish: In a bowl, stir together tomatoes, onions, parsley, jalapeno pepper, apple cider vinegar, coriander, mustard seed, salt & pepper. You can make ahead, cover & refrigerate for up to 4 hours. Top each burger with tomato relish & serve on whole grain bun with lettuce if desired.
