These recipes look good- and I generally keep most of the ingredients on hand. I dont own a crock pot (well I do have a small one for warming hors doeuvres and dips) but I have a gas oven with a very low setting (150 and up) and a covered clay cook pot. I might try a few and then adjust them for canning. Canning is a little extra work up front- but it is so convenient to open up a jar of chili or BBQ pork and beans- knowing exactly what went in them- and immediately have a meal. Often I dont even bother heating- tastes good at room temperature. I guess- Id can the meat, veggies, and herbs , leave out any thickener (flour, e.g.) until I opened. then add, cook, and serve.
