These vanilla, grapefruit and pistachio cupcakes are vegan, sugar-free and dairy-free :) VANILLA, GRAPEFRUIT & PISTACHIO CUPCAKES lagallette Ingredients: • 1 ½ cup white spelt flour • 2 tbsp cornflour • ¾ tsp baking powder • ½ tsp baking soda • 1/3 cup rice bran oil (or any other neutral tasting oil) • ¾ cup Norbu natural sweetener • 1 cup coconut milk • 1/3 cup grapefruit juice • 1 tsp vanilla extract • 1 tsp apple cider vinegar • Slivered pistachios, to decorate Directions: 1. Preheat oven to 180C. Line a cupcake pan with 12 liners. 2. In a small bowl, whisk together the coconut milk and vinegar. Set aside to curdle for 3 minutes. 3. In a large bowl, sift together the flour, cornflour, baking powder and baking soda. Set aside. 4. In another bowl, whisk together the coconut milk mixture, Norbu sweetener, rice bran oil and vanilla extract. Gradually beat in the sifted dry ingredients until smooth. 5. Fold in the grapefruit juice. 6. Fill the liners 2/3 full and bake for 20 minutes or until a toothpick inserted in the centre of the cakes comes out clean. 7. Cool completely before frosting and sprinkling with pistachios.
