Potato Bacon Cakes Recipe Serves 4 Prep Time: 10 min. Cooking Time: 20 min. Ingredients 1 lb sweet potatoes, quartered; 4 slices of bacon, chopped; 3 green onions, sliced thinly; 1 egg; Sea salt and freshly ground black pepper; Paleo cooking fat; Sweet Potato Cake preparation Preparation Place the sweet potatoes in a large saucepan. Add cold water to cover, and bring to a boil; then lower the heat and let simmer until the potatoes are fork tender, about 5 to 8 minutes.
