Things that weve lost from modern kitchens, with a tip of the hat to Katherine Eliska Kimbriel. 1. really good aprons that protect your shirt/blouse. 2 flexible little woven hotpads that let a clever person get a much better grip on a hot dish than those monster mittens afford. THey double as pot-sitters on a countertop. 3. glass covered casseroles of some size, which travel from oven to table or fridge. None of these stupid plastic lids. 4. big wooden spoons and spatulas which dont scar the heck out of good pots. 5. flour-sacking tea towels, the big white ones of some size, that take bleach nicely and that can be used as flouring-cloths and rollout base for pies, etc as well as for drying fine glassware. 6. recipe card boxes, so you dont have to spread out some monster book on your limited counter space. 7. iron cookware: you can still get it, but what they offer pre-conditioned is NOT conditioned. Until its inky black and smooth as silk, its NOT conditioned. And NEVER should it be exposed to water. You wipe it clean, because its so smooth you can and nothing sticks; and you heat it up again, which sanitizes it. A wipedown with oil and youre good. THings modern kitchens have I really like: paper towels and Ziploc bags. And those pre-soaked wiping towels from Lysol, that clean a counter better than, say, a soppy nasty dishrag. THere ARE good new things. But we shouldnt have given up on glass lids.
