This Wednesday is Diwali, the Festival of Light. Heres a yummy #Diwali recipe from Chef Wendy! Naan Khatai are spicy, eggless biscuits with slivered almonds. A delicious treat, and so easy to make :-) NAAN KHATAI 500g Stork Bake margarine 1 cup castor sugar 5ml ground cardamom 2.5ml Robertsons Nutmeg 7.5ml bicarbonate of soda 3 cups cake flour unblanched, slivered almonds • Preheat oven to 160 ºC • Cut margarine into cubes and place into a mixing bowl • Add the castor sugar and beat until pale and creamy • Beat in the spices and bicarb • Sift in the flour as needed to make a soft dough • Using the palms of your hands roll into marble sized balls and place onto a greased baking tray allowing enough space between each one for spreading • Insert an almond sliver into each ball • Bake for 20-22 minutes until lightly coloured • Remove the tray from the oven and carefully place onto a wire rack to cool
