This Weeks Diet Review is the Raw Foods Diet I would struggle to remember a single film Gwyneth Paltrow has made and most people would probably be in the same boat, but the actress is probably more known for her strict and weired restrive diets than for her ability to light up the silver screen. The raw food diet or aspects of it have recently become very popular, so much so that there are dozens of websites and diet books promoting the benefits of this new diet and lifestyle movement. The Raw Food Diet - The Big Idea The main purpose of the raw foods diet is nutrition. Eating foods raw so that you obtain the maximum amount of nutrients from them rather than killing or destroying the nutrients through the process of cooking. This is true for mostly water soluble vitamins which are easily destroyed by heat or boiled out of foods and anti-oxidants such as Vitamin C and B Vitamins. These vitamins are also easily destroyed through food storage and preparation and the older the fruit or food, the lower the vitamin content. Keep in mind that some fruit or vegetables can be stored upto months on end in modified atmospheres losing nutrients before they are sold to consumers. So by the time you get the apple from last years crop, it may not matter too much weather the apple is eaten raw or cooked. But lets assume that you are getting the freshiest possible fruits and vegetables, then of course you would be getting the nutrient benefits from eating them raw and thats why you are recommended to not cook your fruits or vegetables. Heat can also destroy some fat soluble vitamins, ei youre not meant to cook with certain oils containg polyunsaturated fatty acids like olive oil or avocado oil to prevent turning them into saturated fatty acids. Theres another benefit to eating foods raw and that is enzymes. Every living food contains enzymes which assist the breakdown of the food during digestion but most of those enzymes are destroyed during cooking or heating of foods or during food processing. A good example is Milk. Most people who get bloated from drinking milk do so because of the milk sugar lactose which is naturally occuring in milk. During pasteurisation, the lactase enzyme which is found in cows milk is destroyed along with other milk bacteria such as listeria which can cause birth defects in pregnant women who are often warned to stay away from dairy products. Cooking foods does destroy water soluble nutrients, changes the chemical composition and therefore function of some nutrients for the worst, and also destroys the enzymes that come with the foods to help us digest them. Most people will once they get used to eating foods raw, notice an improvement in their digestion and therefore see weight loss. Also note that a lot of foods that are affected by a reduction in vitamins through heating such as fruits arent meant to be cooked in the first place. They are sweet and meant to be eaten raw and naturally pass through the digestive tract without too much of a fuss because plants have engineered it this way, making foods easy to digest so that humans and animals can quickly pass the fruits through their digestive tract and dump the seed somewhere to help with the spreading of the plant. Also it takes a lot more energy to break down the chemical bonds in raw foods than in partially heat digested food.
