This Weeks Special Are you up for another delicacy? On this weeks menu is melt-in-your-mouth butterfish with smoked potato foam, sautéed asparagus and grilled tomato with a bacon crunch. The stromateidae of butterfish contains 17 species including varieties such as sablefish and black cod. Butterfish are deep sea fish who spend most of their lives far off the fishermens nets. You can only find them in the markets during June and July when they come in close to the shores to spawn. The largest fish are about 12 inches long, normal size is about 6 to 9 inches. They are grayish blue on the back with silvery sides and belly. Some are marked with irregular dark spots. Another tpyical characteristic is the soft-rayed dorsal fin running along the length of its back, as well, the anal fin is almost as long. Grill it. Smoke it. Fry it. Or even sushi it! When cooked, its flaky texture is similar to sea bass. The white flesh is soft-textured, mildly flavoured and almost melts in your mouth.
