This goes great with catfish Rice and vegetable pilaf 1 cup sliced fresh mushrooms 1/3 cup onion, chopped 1 clove garlic, minced 1 tablespoon butter or margarine 1/2 cup uncooked regular brown rice 1/3 cup uncooked wild rice, rinsed and drained 1 14- ounce can chicken broth 1/2 cup shredded zucchini or frozen peas 1/2 cup shredded carrot 1/8 to 1/4 teaspoon black pepper 1/3 cup chopped walnuts or pecans, toasted 1. In a medium saucepan cook mushrooms onion, and garlic in hot butter about 10 minutes or until tender. Stir in brown rice and wild rice. Cook for 3 minutes, stirring frequently. 2. Carefully add chicken broth. Bring to boiling; reduce heat. Simmer, covered, for 45 to 50 minutes or until rides are tender and most of the liquid is absorbed. Remove from heat. 3. Stir in zucchini, carrot, and black pepper. Let stand, covered, for 5 minutes. Stir in walnuts.
