This is a favorite pork loin recipe for sure...it is a little sticky, sweet and just so, so good!! I served it with mashed potatoes & some veggies!! ***************************************************************************** Sticky & Sweet Pork Loin Serves 8 A delicious baked pork loin that perfect for a quick weeknight dinner Prep Time - 15 min Cook Time - 25 min Total Time - 1 hr Ingredients 2 - 1 1/2 lb pork tenderloins 2 tbsp cornstarch 1 tbsp. brown sugar 1 tbsp. salt 1/3 cup maple syrup, divided 2 tbsp molasses 1 tbsp. red wine vinegar 2 tsp salt 2 tsp pepper 2 tsp garlic powder 1/4 tsp ground ginger Instructions 1.Preheat oven to 375 2.Line a rimmed baking sheet with foil or parchment paper and place a wire cooling rack on top of the baking sheet & spray with nonstick spray, set aside 3.In a small bowl combine cornstarch, brown sugar and salt 4.Sprinkle mixture over both pork tenderloins and press into pork, making sure it is coated evenly 5.In a large pan, sprayed with nonstick spray, brown all sides of the pork tenderloins, over medium-high heat, it should take 5-7 minutes 6.Place browned pork onto rack, set aside 7.Drain off ay excess grease and then combine 1/2 cup maple syrup, molasses, vinegar, salt, pepper, garlic powder and ground ginger 8.Bring mixture to a high simmer and cook until it is slightly thickened, 2-3 minutes 9.Reserve 2 tbsp. of liquid in a small bowl, set aside 10.Brush 1/3 of liquid onto pork and place into the oven 11.Roast for 15-20 minutes, or until the internal temperature is 130 degrees 12.Brush 1/2 of the remaining glaze onto the pork, return to oven and roast for an additional 5 minutes or until the internal temperature reaches 135-140 degrees 13.Brush remaining glaze over the pork and let pork rest for 10 minutes before serving 14.While pork is resting stir remaining maple syrup into reserved glaze 15.When ready to serve slice pork and drizzle lightly with sauce 16.ENJOY!! 17.I served it with my favorite mashed potatoes, recipe can be found here: bit.ly/mashedtater Each serving is 7 WW+ points Nutritional Info Calories 306 Calories from Fat 54 Total Fat 6.0g Saturated Fat 2.0g Trans Fat 0.1g Cholesterol 124mg Sodium 1554mg Potassium 827mg Total Carbohydrates 15.9g Sugars 11.7g Protein 44.6g Vitamin A 0% - Vitamin C 0% - Calcium 3% - Iron 14% Nutrition Grade A- By MJ Follow me on Pinterest-- pinterest/lisabrickett/ Join facebook/groups/lisashealthyfriends for more tips, tricks, motivation, support, recipes and fun!!
