This is a postscript to my previous post on Big Boys potato pancakes. I was going to try that recipe, but then I realized it calls for grated potatoes. And I needed to make good use of heaps of leftover mashed spuds. So I settled on this recipe, which is both simple and oh-so-tasty. It takes patience (one of my strong suits), for after making the little cakes (hand-formed), you cook them for 15-20 minutes on one side, and 15 minutes on the other. But the results were beyond my hopes. And GiGi - an honest but kind critic of my cooking - loved the little cakes and gladly crowned me as the household potato caker.
