This is easy but delicious. 1 cup sliced carrots 1 large onion, chopped 1 cup celery, cubed 1/2 colored pepper, cubed cook the above until almost tender. 2 medium sweet potatoes, medium cube [Cooked until almost tender] 1 large can small dice tomatoes 2 cans black beans Cook the above together until the broth has a black hue from the beans. Add about 1 # Original Conecuh Sausage [Cook in oven to get rid of some fat. Then slice in half circle rounds] Add sausage to soup and simmer for flavors to blend. Garnish with fresh cilantro. You could also garnish with avocado, roasted corn, and/or sour cream. Bon Appetit!!!
