This is in lieu of a Christmas letter. I have a suggestion for a great gift - yes, theres still time! It really costs you nothing, it saves lives, it helps restore the environment, it might make you healthier, it keeps giving all year round, and youll be as appreciative as the recipients. First, a little background. This is the season of giving and peace. Yet for millions of animals at this time of year, its a season of horror and death. Why? Because of peoples choices. You can turn this around by buying this instead of them. Perhaps when you are thinking of what to have for dinner, or what to order at a restaurant, you automatically think chicken. But that choice imposes unnecessary cruelty, suffering, and death. Heres how you can turn that around: - Theres a 95 percent chance youll like gardein veggie chicken products. This is a great choice if youre pressed for time, or if you want to spend your time in the kitchen on a nice salad or a quinoa-vegetable side dish, and just pop the main dish in the toaster oven. - Ditto for Boca breaded chicken patties. Put them on a bun, top with barbecue sauce, sautéed onions, and a pickle. Or anything you want. - Beyond Meat or seitan (sold near the tofu) works great in just about any recipe that calls for cut-up chicken. - Peruse recipes using tempeh that get constantly high ratings. It has a somewhat nutty flavor rather than a neutral flavor, and I want your first go at it to be a success. Its filling and satisfyingly chewy. - Try out restaurants that are vegan or have lots of vegan options, to lower your chance of falling into the chicken again trap. - Or have something entirely different: A soba noodle stir-fry, or Indian dal dish, or falafels with a tahini sauce, perhaps. Virtually all chickens raised and killed for their flesh are bred to grow so fast that most have lameness problems by the time theyre killed at only seven weeks old - just past babyhood. Almost all are kept in cramped conditions and never meet their mother or father (who are probably kept in even worse conditions). Surely this is not consistent with peace on earth. The solution is easy; you just have to decide to do it - and with all my heart, I dearly hope you will! Let this be the season of peace to all creatures!
