This is in my crockpot right now! Mexican Egg Bake (In the crockpot) 12 eggs 1/2 cup milk 1 can diced tomato 1 lb sausage, ground beef or ground turkey 1 pkg taco seasoning 1 bunch green onion 2 cups shredded cheese 1 pkg frozen hashbrown potatoes Salt & pepper Spray crockpot with cooking spray. Brown ground meat, drain excess fat. Mix eggs, milk, tomatoes, onion, taco seasoning, and meat in large mixing bowl. Layer 1/2 of the potatoes in the bottom of crockpot. Sprinkle salt and pepper over potatoes. Next, layer 1/3 of the shredded cheese. Pour 1/2 of the egg mixture over the cheese. Repeat layers, using the rest of the potatoes, 1/3 of the cheese, and the rest of the egg mixture. Top with the remaining 1/3 of the cheese. Cook on low for appx 8 hours or on high for appx 4 hours.
