This is like drinking a piece of apple pie. Also great when you eat the slices of apples and pears that have soaked into the drink. Apple Pie Mock Sangria 51 oz white grape juice 40 oz fresh apple cider 16oz club soda 1 c caramel sauce, to taste 4 honey crisp apples, chopped 3 pears, chopped 2 cinnamon sticks Cut the fruit and place in the bottom of your pitcher or dispenser Combine all of the ingredients stir and see if it has enough caramel sauce Sit overnight, stir and then serve. You can add the club soda right before serving, this will add a nice crispness The fruit is also delicious to eat with the drink. Vanilla Bean Caramel Sauce Yield: 1½ cups 1 cup sugar 1¼ cups heavy cream ½ tsp. coarse salt 1 tsp. vanilla extract Spread the sugar as evenly as possible over the bottom of a large, heavy-bottomed pot. Place over medium-low heat, watching carefully. This might take a while. When the sugar begins to liquefy use a spatula to spread more of the sugar evenly and gently stir slightly. Continue stirring very gently until all the sugar is melted, taking care not to over stir. This can be tricky. Took me three times to get it right Once the caramel reaches an amber color, immediately remove the pan from the heat. Slowly and carefully whisk in half of the heavy cream. The mixture will steam and bubble violently. Stir until the cream is well incorporated, then whisk in the remaining cream. Stir in the salt and the vanilla. If any sugar has hardened, place the saucepan over low heat and whisk until smooth. Store in an airtight container in the refrigerator. If needed, it can be rewarmed in the microwave or in a saucepan over low heat.
