This is my special black cake recipe. Its my signature dish. Its filled with flavor and the addition of the guava paste makes the flavor so interesting. So here goes My SPECIAL BLACK CAKE RECIPE: Part 1 8 ozs flour 6 ozs sugar 8 ozs butter 4 eggs 1 tsp baking powder 1 tbsp. lime juice 1 tsp lime zest Part 2 8 ozs raisins 8 ozs currants 8 ozs prunes 8 ozs cherries 1/2 c fruit preserves 2 ozs guava paste 4 Tbsp molasses 1 bt colbeck cherry wine/ cream sherry mixed with 1/2 c brandy/ strong rum 1 bt crosse and Blackwell food browning or 1 black gel food coloring use sparingly 1 tsp grated green ginger 1 tsp ground cinnamon pinch of ground clove Method Prepare before hand the fruits. Use a food processor and crush very finely the raisins, currants, cherries, prunes. Do not use any liquid while using the food processor. Put in a plastic container with a tightly fitting lid. Add fruit preserves, guava paste, molasses ginger, cinnamon and clove and mix well. Add 1/2 c wine mixture. cover and leave for a while. Cream butter and sugar until light and fluffy. Add eggs one by one along with the lime juice and zest. Beat thoroughly after each addition. mix flour with baking powder and sift. Add to creamed mixture. Add the processed fruits and mix. lastly add the food coloring or browning and mix depending on the shade you prefer. Pour in a greased floured and lined pan. Bake in a pre heated oven. Place a pan with water on the oven floor so to keep the cake moist while baking and to prevent burning. Bake until the cake shrinks from the sides. Remove from the oven and cool. Pour the some wine over the cake until it is well soaked and cover with plastic wrap then foil to prevent moisture from getting in. leave for a few days. Remove from the pan and wrap in cling wrap and foil until you are ready to eat it. Please read thoroughly before attempting to make it. Happy Baking
