This is one of my familys favorite holiday casseroles- Three Onion Potato Bake 3 lbs small red potatoes 1 white onion (julienned) 1 bunch green onions chopped 1 lrg can French Fried onions 2 cups sharp cheddar shredded 1 1/4 cup butter milk 1 lb raw bacon 1 can Cream of Celery Soup 8oz sour cream 2 Tbs soy sauce Salt and pepper to taste Directions: Boil whole potatoes until just fork tender but not mushy. Drain, cool, quarter and set aside. In a large mixing bowl stir together cream of celery soup, buttermilk, sour cream, soy sauce and set aside. Cut raw bacon into small bite sized pieces and brown till slightly crisp. Remove bacon pieces from pan but leave remaining bacon grease to lightly sauté white onions. Toss white onions in hot bacon grease till coated and slightly softened but not translucent. (2-3 min) You want them to still be a little crisp. Remove from heat, and pour the onions and bacon grease over the quartered potatoes in a large mixing bowl. Salt and pepper potatoes to taste and toss to ensure full distribution of bacon grease and salt. Add shredded cheese, chopped green onions, bacon pieces, French fried onions and toss again. Fold in the soup and milk mixture and pour into a casserole dish. Sprinkle with a bit of extra shredded cheese on top, cover the casserole with a loose piece of parchment paper (just lay it on top but do not crimp the sides in order to let air circulate and create a cheesy crust) Bake at 400 degrees for 30 to 45 min or until it is bubbling in the middle. Let it rest for 5 to 10 min before serving and enjoy this addictive casserole.
