This is the recipe I use for oatmeal cookies. 1/2 c butter 2/3 c brown sugar 1 egg (slightly beaten) 1/2 t vanilla 3/4 c flour 1/2 t soda 1/2 t cinnamon 1/4 salt 1 1/2 c oats (I like old fashioned oats) 3/4 c raisins (Yummy) 1/2 c nuts (walnuts for me) cream together the butter, sugar, egg and vanilla. In another bowl mix the flour, soda, cinnamon and salt. Stir or mix into wet mixture. Stir in oats, raisins and nuts. This will seem dry but dont worry just keep folding it together. Chill at least 30 minutes. I use a small scoop to measure and scoop out onto cookie sheet. Bake for 12 minutes at 350. Let cook a couple of minutes then place on cooling rack. So good. Will yield about twelve cookies.
