This is what I came up with for my limited ingredient list! I didnt even have a zucchini! Creamy Moroccan Beef Pasta 400g beef strips Small chunk of pumpkin grated 1/2 red capsicum finely diced 1 small brown onion finely diced 2 carrots finely diced 1 tomato finely chopped (almost to a puree) *You could use any vegies of your choice here really* 1 tsp garlic 1 tbs tomato paste tablespoon Moroccan seasoning 1 cup chicken stock 1 cup cream extra virgin olive oil pasta to serve Heat 1 tbs oil in pan. Saute the garlic for a couple of seconds. Add half the beef strips. Sprinkle with half the moroccan seasoning, then stir fry til browned. Set aside. Repeat with the rest of the beef. Add a little more oil to the pan, and add all the vegies except tomato. Stir fry until starting to soften. Add tomato and tomato paste and stir fry for a minute or so. Return beef to pan and stir til coated with vegies and tomato mixture. Add stock and cream. Bring to boil, then reduce heat to low and simmer til beef is tender. I am going to let mine simmer for about 2.5 hours and see how it goes. Might need to add more stock. Can add more Moroccan seasoning to taste also. Serve over pasta or rice.
