This is what I cooked yesterday. I combined 3 recipes and this is as close as I can get. Its not so easy to write up a recipe as I dont measure what Im adding. This got rave reviews and Im looking forward to making it again. It seems like a lot of ingredients but it was easy to make. Coconut Curried Red Lentil Soup with Baby Kale The red palm oil and red lentils give this soup a beautiful orange color and the coconut flavor is delicious! Feel free to use any greens you like such as spinach, collards, kale, mustard greens or even nettles. INGREDIENTS 2 tbsp Nutiva Organic Red Palm Oil or Coconut Oil 1 tsp Cumin Seeds 1 tsp Fennel Seeds 1 tsp mustard seeds, more to taste 1 tsp coriander seeds 1 TB curry powder 1 cup or 1 big red onion chopped 2-4 stalks celery, chopped 2-4 cloves fresh garlic, chopped fresh ginger, chopped, not sure how much I used 1 cup Red Lentils (rinsed) I used 1 ½ cups. 1 box of No Chicken Broth and Water 4 cups chopped sweet potatoes, not sure how much I added Winter Squash, chopped, you can use both or just squash or yams 1/2 cup Nutiva Organic Coconut Manna™ or Coconut Butter 2 tightly packed cups baby kale Add soy sauce or Bragg’s Liquid Aminos to taste Add Ume vinegar to taste Fresh lemon juice Chopped Cilantro INSTRUCTIONS Heat the oil in a 6-quart stockpot over medium heat. Add the cumin seeds, fennel seeds, mustard seeds and coriander seeds. Fry for about a moment until the seeds begin to pop. Add curry powder, chopped onions and celery and sauté for a few minutes till translucent and fragrant. Add some water to pot if they start to stick. Add chopped ginger and garlic and sauté very briefly. Add red lentils, broth, water, squash, sweet potatoes and kale. You can add the greens later on in the cooking if you prefer. Bring the ingredients to a boil; then reduce the heat to medium low. Simmer covered for about 15 minutes, or until the lentils soften and begin to melt. Add soy sauce and Ume vinegar. You can also add salt and pepper to taste. Taste and adjust seasonings, if you like. Serve with fresh chopped cilantro and fresh lemon juice.
