This is why I write my weekly column for the paper every week!!! Dear Brett, I thought Id just drop you a quick line regarding your recipe and subsequent advice to me about storage. After leaving my version of your pickled Golden Beetroot I opened my first jar and the results I have to say were well worth it. It is splendid. . I adhered to your advice, I merely adjusted and used green chilli rather than your red ones as I prefer the flavour. The golden Beetroot looked wonderful more like peaches in fact. The flavour was fantastic. They still retained their earthy flavour and texture. Id like to thank you for sharing your recipe and giving me your generous advice.
