This morning we were a little late about getting up, about 5:00, made a pot of coffee and put one frozen biscuit in the oven to cook. Norma has her usual English Muffin and honey. While waiting for my coffee and biscuit to get done she puts on a pot of muscadines (from the wild) to cook into preserves. Norma had already prepared the muscadines yesterday afternoon by washing, cutting them open and squeezing the pulp out. She cooked that pulp enough to run it through a seeder to get the seeds out. She then cut the hulls up with her kitchen scissors, mixed everything back together and refrigerated until this morning. This morning she decided to use Ball Real Fruit Pectin and went more or less by their recipe except she uses a little over half the sugar called for. That means it has to be cooked longer and instead of an overly sweet taste it is somewhat tart. Much better for you. We came out with 6 jelly jars (½ pint each), 3 regular pints and a sampler. Really good, I know because I’m the sampler. Then we went outside and while Norma watered tomatoes, peppers and a few flowers I mowed the front lawn. By 9:30 AM we are ready to go help celebrate a friend’s 91st birthday
