This recipe is AMAZING. Take note all you pumpkin lovers. Diane Welch Sue Morrison Sue Rysz Liza Lee Bigliety Pumpkin Pie Rice Pudding Combine 1 1/2 cups white rice (uncooked), 1 12 ounce can of evaporated milk, 1 cup canned pumpkin, 1 cup water, 1/2 cup packed dark brown sugar, 2 teaspoons pumpkin pie spice, and 1/4 teaspoon salt in medium saucepan. Cook over medium heat for 20 minutes, stirring frequently. Remove from heat and stir in 1 teaspoon vanilla extract. Let stand 5-10 minutes and then devour. :)
