This recipe takes all the awesome flavors of the season and rolls it into a yummy cookie. It has a soft, chewy texture thats part cookie, part muffin so Im calling it a mookie. Enjoy! Sassys Cranberry Orange Spice Mookies 1 cup butter, at room temperature 1 cup honey ½ cup xylitol 2 tbsp molasses 3 eggs 1 tsp vanilla 2 cups whole wheat flour 1 ½ cups quick oats 1 cup dried cranberries 2 tsp cinnamon 1 ½ tsp ginger 1 tsp ground cloves 1 tsp baking powder 1 tsp baking soda ¾ tsp salt Zest of 2 large oranges 1. Preheat oven to 375 degrees. Spray cookie sheets with cooking spray. 2. Cream butter, honey, xylitol and molasses together until fluffy and well combined. Add eggs and vanilla, stir until thoroughly mixed. 3. In a separate bowl, combine remaining ingredients thoroughly. Add dry ingredients to wet ingredients and mix until just combined. Don’t over-mix the dough. 4. Using a tablespoon, drop batter onto prepared baking sheets. Alternatively, you can dump the dough onto a cookie sheet and use your fingers to press the dough out to each edge to make cookie bars. 5. Bake for 10-15 minutes (or up to 20 if you’ve pressed all the dough into a rectangle on the cookie sheet) until the edges are browned and the tops look dry. 6. Allow the cookies to cool before removing from the baking sheets. They’re fragile until completely cool.
