This started as Citronlimettes Quinoa & Black Bean stuffed peppers (recipe in the comments). I added corn into the filling, left the pepper jack cheese out of the filling (people who werent on dairy-free diets were able to add it later), surrounded the whole thing with fresh-picked green beans, and served it with corn on the cob from the local farmers market. It was the best meal of our 4 day camping weekend!!
