This started as a lunch meal and turned into the toppings on my homemade pizza...Brussel sprouts pizza. Dont judge until you try. I had some Brussels sprouts that I needed to use soon. I sautéed them for lunch in coconut oil with a yellow pepper, purple onion, 2 cloves of garlic and some sea salt and black pepper. It was yummy..and very colorful. As I was making homemade pizza for dinner I realized I didnt have many vegetables for the toppings. So I topped the homemade gluten, dairy, soy, potato starch free crust with the Brussel sprouts. It was AWESOME...mikey liked it too!
