This video shows the moving fermentation landscape at the surface of the 2104 Solune Barbera Rosé, evolving right in front of our eyes. The moving foamy islands are where the CO2 released by the fermentation is strongest, enough to create micro-bubble islands. Eventually, all the islands coalesced into a solid bubble cover, a bit like the birth of a continent. We were lucky enough to catch it just as it was taking shape. Not only visual poetry, but the resulting aroma from this primordial phenomenon was truly out of this world !
