This was a fantastic email I recently got from one of our kick ass members Okie dokie! I saw a fb post about Eden Organic Sauerkraut. As you know, Im a huge fan of fermenting (it is my job) and ferment veggies at home. Eden is a fine organic once fermented cabbage, but it is NOT alive. It has been pasteurized, killing most of the probiotics. If it were still alive and in a jar at room temp for an extended period, it would explode. Ive been there, not good!!! The Eden company pasteurizes at 175*F which may retain the integrity of some of the lactic acid, stressing it, but not killing it, but not the probiotics. Many strains of probiotics start to break down above 75*F, which is why you need to keep them in the fridge. The Low Pasteurization process happens at 145*F, and is still considered too warm for many strains of probiotics. End game-if your kraut is on a shelf and hasnt exploded, its not as alive as you think! No irradiation either, bad! I know its a big step for some just to buy and eat kraut, but raw will help heal the gut! Just didnt want people to think that the Eden product was healing there gut. End game - shelf kraut = not as good as fridged kraut!
