This was a favorite Sunday breakfast at our house when I was growing up. I hope yall enjoy it.We use to call it Sunday scrambled eggs. 1 russet potato peeled and diced 1/2 cup diced onion 1/2 cup diced bell pepper 1 cup diced smoked sausage 6 slices diced raw bacon 1 tablespoon diced green chiles 6 eggs beaten with 2 tablespoons milk salt black pepper granulated garlic or garlic powder now to make this the right way you also need biscuits and gravy so make you favorite biscuits and make some good country gravy place diced potatoes in a pot of salted boiling water and cook until tender drain in a large skillet over medium low heat cook bacon,onions and peppers until bacon is crispy add sausage, green chiles and cooked potatoes sprinkle on your seasoning to desired taste add eggs and scramble to put this dish together split open two biscuits and place on plate put scrambled eggs on top of biscuits and pour gravy over eggs and there you have it ...
