This was my first time making prime rib. Was probably a ten-pound roast. Crusted it with a ton of salt, pepper, rosemary, and garlic powder. Roasted it at 500 degrees until it hit 100 on the digital meat thermometer. Then turned off the oven and let it finish cooking until it hit 115. Removed it from the oven and let it rest until the temperature came to about 125. Middle was perfect rare. End of the roast was a nice medium. Going to make a very bold statement here: it rivaled the best prime rib Ive had at Walters Steakhouse!!
