This week is my last week at school and a general catch-up week for studies before my big finals! If this page is a little desolate for the next week or so, that is why. :-) Heres a thought for the day: Breakfast is the most important meal of the day - you know this - but it doesnt have to be hard work to make something fresh, hot, healthy, and delicious to get your day going. Set yourself up for success by purchasing these 5 ingredients for an amazing breakfast option outside of your normal grain-based breakfasts (oatmeal, cold cereal) or all-american breakfasts (eggs + meat + toast + juice + yogurt parfait). Farm Fresh Fried Egg Tostada Sliders You Need: - the freshest/healthiest eggs you can get your hands on (I get mine from Lilys Eggs (St. Helena, CA) - Organic Gluten-Free all-corn tortilla sliders - Fresh, organic cherry tomatoes (room temp), halved - Fresh cilantro, chopped - A good quality sea salt (I used a smoky Hawaiian lava salt) Optional Ingredients (if time permits!): - Green Onion, thinly sliced - Fresh Avocado, sliced - Fresh Hot Pepper, minced To Make: In a large, stainless steel pan, add a little olive oil (or real butter) and heat. Put 2 corn tortilla sliders into pan to heat up. Break 2 eggs into same pan (make sure raw egg doesnt touch tortillas) and cook over-medium (approx 2-3 mins total). Remove tortillas and plate, placing 1 egg onto each tortilla. Cover with remaining veggie ingredients and top off with a pinch of sea salt for oomph. Its not gourmet, but who has time for that on a weekday morning?? This takes approx. 8 minutes to prepare, adding additional cooking time per 2 eggs added to your order. :-) The freshness of your ingredients is what makes this simple dish so satisfying. Add a glass of fresh-pressed juice or a simple almond milk latte and you have breakfast covered. YUM!
