This week on Tasty Tuesdays, we present the round and juicy tomato. To some, this succulent fruit is their one true nemesis, while others don’t seem to mind incorporating this healthy fruit into their diets. So if you’re one of those who would rather skip out on tomatoes, maybe today’s topic will change your mind! (:< Many people associate tomatoes with the color red, and that’s because the red hue is a phytochemical called lycopene. Lycopene is a powerful antioxidant, meaning it protects your body from harmful free radicals, and tomatoes pack a powerful punch! That means this colorful phytochemical makes tomatoes a possible weapon against certain cancers. Studies suggest that a lycopene-rich diet may be connected to a reduced risk of prostate cancer. In addition, several laboratory studies have shown that lycopene has stopped certain cancer cells from growing, such as breast, lung, and endometrial cancer cells. The American Institute for Cancer Research also suspects lycopene may stop the growth of tumors by interfering with abnormal cell growth. So, to those tomato doubters out there, are you willing to give the humble tomato one more chance? :] Here are some easy ways to incorporate tomatoes into your diet!
