This week recipe is called Migas, which is a delicious breakfast dish, plus it is easy and very convenient, especially if you are looking forward to use left-over ingredients in your morning cooking. The word migas is derived from the Spanish word for crumbs. You will see there is no better way to start your day, but with a satisfying, easy to make and delicious meal like Migas. MIGAS (serves 2) INGREDIENTS 2 El Mercado regular size tortillas cut into ½ inch strips 2- 3 tablespoons olive oil 4 large eggs 1 tablespoon salsa (your favorite, you can be omitted) Black pepper, to taste 2 tablespoons chopped green chiles 2/3 cup grated mild cheddar or Monterrey jack cheese or combination of both ¼ cup finely chopped white onion Sour cream PREPARATION In a small bowl, lightly beat together the eggs, salsa, and pepper. Set aside. Fry the corn tortilla pieces in olive oil in a heavy skillet in a medium heat. When the tortillas pieces are little brown take them out and put them in a plate with a paper towel, set them aside. Take out some of the left over oil. Pour the egg mixture into the skillet. Add tortillas, chopped onion, cheese and green chiles. Scramble until the eggs are done. Serve at once with refried beans. Garnish with additional salsa and sour cream. In addition to the ingredients called for this recipe, some additional possibilities for enhancing your migas are crisply cooked and crumble bacon, crumbled chorizo (browned before you add the eggs), cooked, shredded chicken or turkey, chopped tomato, chopped avocado (sprinkled with a little lemon juice), minced fresh cilantro, grated or diced potato (sautéed until tender before adding the eggs), poblano chiles, green bell pepper, green onion, cayenne pepper (a dash or so) and minced garlic. You will see there is no better way to start your day, but with a satisfying, easy to make and delicious meal like Migas.
