Braised Skirt Steak and Hand Cut Chips I marinade the steak in ginger, spring onion puree and soy sauce for 4 days before braising it on a bed of sweet peppers, garlic and shallots, it is served with hand cut chips which have been tossed in a little chili, garlic, sea salt, Szechuan peppercorns and clarified butter served with giant onion rings with a hint of lemongrass and a wasabi scented coleslaw
