This year my family and I spent Christmas Day at home. Weather is warm and no snow in sight. Kids were very happy with their gifts and I spent my day enjoying the process of cooking the main dish of Beef Wellington. I made the puff pastry a day before hand and also the mushroom paste/Duxelles the night before. For my first time, I think I did pretty good, only during the last minutes of baking, the beef oozed some of its juices and soaked the bottom part of the pastry. The meat cooked medium well as I wanted to and everything else went great. Happy that I made another Homemade Xmas delicious and memorable :)
