Those who have been attending my fall shows have generally been enjoying Chicken Cacciatore served with Garlic Bites. Heres the Recipe! Perfect to whip up on a chilly day like we are experiencing today in Northeastern PA CHICKEN CACCIATORE with GARLIC BITES: Ingredient List: 2 1/2 pounds boneless, skinless chicken breasts or strips, raw/thawed/trimmed 1/2 Cup Nice bunch of Fresh Basil (pulse in Manual Food Processor) 1 medium onion, (slice #1 setting with Simple Slicer) 4 cloves pressed garlic 32 oz chicken stock (1 box or 2 cans) 1 nice size container of whole clean white mushrooms, sliced (with egg slicer plus) 2 oz fresh Parmesan cheese, grated black pepper & Salt Olive or vegetable oil 3 colored peppers (red, yellow, orange), sliced on #2 setting with Simple Slicer 1 pound cooked pasta (egg noodles, bow tie, ribbons, etc) 1 tsp Italian Seasoning 2 Classico Spicy tomato and basil spaghetti sauce For Garlic Bites: 4 Cloves of Garlic, Pressed ½ stick of butter 1 tube of Grand Biscuits Italian Seasoning Directions: 1) Turn oven on to 375 degrees. 2) Place Double Burner Grill Pan across two burners on stovetop and put both burners on medium high. 3) Place chicken in large ziplock with a little 2 Tablespoons oil and 1 tsp Italian Seasoning -massage to spread oil and then pound with flat side of meat tenderizer just to get them all the same thickness. 4) Place meat onto hot grill pan, 4-5 minutes per side or until thermometer reads 165 degrees. Remove to stainless steel bowl and chop with salad choppers. 5) Meanwhile, prepare all prepared veggies and place into Stainless Steel Bowl. (Basil processed in Manual Food Processor; slice peppers and onions on Simple Slicer; slice mushrooms with Egg Slicer Plus) Add 2 Tablespoon of Olive Oil and Toss – then put into hot double burner grill pan and stir and cook for about 2 minutes. 6) Add the chopped up chicken back into the grill pan with the sautéed veggies. 7) Pour on two jars of sauce. Stir to incorporate 8) Drain pasta and spread across top of chicken mixture. 9) Sprinkle on cheese (more if you’d like and stir in) 10) Put entire pan into the oven for about 6-8 minutes, just to heat sauce and melt cheese. Serve with Garlic Bites: 1) In Executive 10” Sauté Pan, melt one-half stick of butter. 2) Press in 4 cloves of garlic. 3) Toss in 1 Tube of Grand Biscuits that you’ve quartered using serrated knife. 4) Sprinkle with Italian Seasoning. 5) Bake in oven 22 minutes 6) Slide biscuits out of pan onto a plate.
