Tim made this with the giant Chicken of the Woods mushroom that he found. Chicken with Rosemary and Garlic The chicken refers to Chicken of the Woods mushroom, but chicken strips would also be good in it! 1 cup wild rice 3 cups water 2 TBS plus 1 TBS butter 1 medium onion 2 large garlic cloves 2 cups Chicken of the Woods mushroom 1/4 cup sherry 1 sprig rosemary salt and pepper Boil wild rice as instructed to on the package with 1 TBS butter. Start preparing the rest of the recipe about 15 minutes before the rice is done. Split the onion down the center from the top so that it separates into strips instead of rings, and slice. Crush and chop the garlic. Saute the mushrooms for 5-10 minutes until almost tender. Add the onions and garlic, and sauté. Add the 2 TBS butter, sherry, rosemary, and salt and pepper to taste. Turn the heat down a bit and cook until the liquid has evaporated. Remove pan from heat. Place rice on a serving platter, pour rice and mushroom mixture on rice an serve. NOTE: Make sure you know what a Chicken of the Woods mushroom is. I think another gourmet mushroom would be good, or even just chicken strips. * Missouris Wild Mushrooms by Maxine Stone
