Tip: I recently was asked to make a rocking horse cake topper with no enough time to buy the cutters. Therefore, I decided to get an image online, transfer it to the fondant using parchment paper and use my craft knife to cut it. But the two first times I tried cutting through the fondant the edges of the horse were really bumpy and wrinkled as shown in the first picture. Because I was working with gum paste it would dry really fast and even though I was using my fingers to smooth it out, still the finish was too fuzzy for me. I flipped the piece over to clean it and noticed that the bottom was a lot better, the edges were perfectly cut and was almost wrinkle free. So I rolled a new piece of fondant out again, turned my parchment paper with the top face down, so that the bottom would be my new top and cut the figure again. It was a success! You can see the differences on the second picture. From now on I will apply the backwards cutting technique to my projects and have a much better finish to my 2D toppers. Hope you can use it too :)
