Tip of the Day: Our family really likes a variety of winter squash--especially butternut, hubbard and acorn. Even though it will keep a long time in a cool, dark place, I like to put some in the freezer. Just cook the squash like you would if you were going to have it for supper, then scoop it out of the skin and put it in freezer bags or containers. You can roast it in the oven, cook it in the slow cooker, roast in the oven or even nuke it in the microwave (though this last option will somewhat compromise the texture). There are all kinds of recipes online for how to use winter squash in soups, sides, breads and even pies. YUM!
