To everyone who keeps posting links to blogs decrying the legitimacy of gluten sensitivity: I do not have celiac disease. Two years ago, I decided to try avoiding gluten, expecting no change whatsoever, to see if my digestion improved. It did. This can probably be partially attributed to other healthy changes I made around the same time. But something else, something I never even conceived of, also happened. My feet, which had been chronically swollen 24/7/365 for 10 years, through half a dozen doctors with no diagnosis, went back to normal. When I eat wheat, they swell back up. When I avoid it, they stay normal. I also notice a reduction in inflammation of joints, especially my fingers, but my feet have been the big thing. So, I dont know why it makes you feel so good to put other people down for a dietary choice that doesnt even impact your life in any measurable way. I may never understand what you get out of it. But you make choices about your food based, at least in part (I hope), on how it makes your body feel. I avoid wheat because doing so affords me relief from an ailment whose discomfort has plagued me for a DECADE. And this is quite possibly the only thing that could ever motivate me to give up my 3 favorite foods: pasta, bread, and pasta. I cant have these things ever. Not even as a treat. Not even on my birthday. One does not self-impose such restrictions for fun, or for attention. So get off my case.
