Today I decided to cook something that I haven’t cooked in a long time and I have been wanting for a while. I made Pastelon, Spanish version of the lasagna but instead of using pasta I used sweet plantains. It came out amazing. Picture 1 is the Pastelon after being prepped but before going into the oven. Picture 2 is the Pastelon right out of the oven, cooked and nice and hot. Good eatings tonight for dinner. Annie Quesada, baby, I wish you were here to have some. I love you and I miss you mama.
