Today Kelli Rantz shared her Primal Bites with the class and now shes sharing the recipe. Thank you Kelli...YUM! Kellis Primal Bites: 2 cups regular oats 1 cup chopped nuts and seed (I used 1/2 cup raw almonds, 1/4 cup raw sunflower seeds, 1/4 cup raw pumpkin seeds) Optional Small seeds- 1 Tb chia 2 Tb milled flax seeds (I found at Groceries outlet and like this better than the ground ) 1/2 cup dried fruit (cherries are my favorite, raisins and cranberries are next) 1/4-1/3 cup chocolate chips 1/4 cup (=4 Tb) almond butter 2 Tb canola oil 1/4 cup brown rice syrup 1/4 cup maple syrup Preheat oven to 350. Line a 8x8 or 9x9 in pan with parchment paper so it come up the sides. Mix together the oats and nuts and large seeds in the pan. Bake for about 10 minutes until the nuts just start to color. Meanwhile, In a small saucepan, mix together all the liquids and bring to simmer for one minute. Then take off heat. In a mixing bowl, mix together the toasted oats and nuts and the small seeds and dried fruit. Then add the syrup and mix well. Pour half of this sticky mix back into the pan with parchment paper and spread it out, sprinkle with chocolate chips and then add the rest of the granola on top. Put another piece of paper on that and press firmly. Return the pan to the oven, turn oven down to 325 and bake 10 min. Cool about 1/2 hr. Lift out of pan using the parchment and cut into 16- 24 bars. Store in airtight container. Notes on varying the recipe. You can adjust the sweetness by varying the amount of rice syrup vs maple syrup. The rice syrup is less sweet. Maple syrup can be replaced with honey as well. You can also substituted one tablespoon of molasses for the maple syrup to and it gives it a stronger flavor (and a little more iron). I have also seen recipes with coconut oil and dried coconut but I havent tried. I have a friend who also use part agave syrup. Have fun with it - try different flavor combinations. Its a very forgiving recipe. If you use less syrup it will be drier but still good. If you like it chewy, dont bake as long. If you like crunch, cook the syrup a little longer before mixing in the oats. I think my next version will have candy ginger instead of chocolate, with raisins and cinnamon it.
