Today is my fathers birthday...he would have been 60. Earlier I channeled him for cooking...made mushroom and chickpea stuffed poblano peppers with a smokey tomato sauce. Salad greens and sauteed asparagus/zucchini for sides. When he was alive, I could barely make spaghetti, of the jarred marinara sauce variety, as my contribution for a meal, so my father tended to do the cooking when wed do dinner. He was a wonderful cook and you could tell he enjoyed the whole process. Id always wonder (sometimes assume) that I was skipped on that particular gene because I found cooking overwhelming. It wasnt until after his passing...and with many, many trial and errors that I find myself loving the cultivation of this practice as he did. I think of him often when Im in the kitchen, today especially. Id love for him to see what I can create now. I made this particular dish as a way to celebrate his birthday...with the thought of how much hed enjoy this. Happy Birthday Dad :)
