Today is the first day of summer!!! Time to break out the smoker and make . . . Hard Rock Cafe Pig Sandwich Marinated cabbage 2 tbl white vinegar 1 tbl sugar 4 c. thinly sliced cabbage 4 cups hickory smoking chips spice rub 2 tbl kosher salt 2 tsp cracked black pepper 1 tsp paprika 1/2 tsp onion powder 1/2 tsp gound sage 1/2 tsp thume 1/4 tsp cayenne 1 boneless pork loin roast (3 to 4 pounds) sauce 1 30 ounce can tomato puree 1 cup white vinegar 3/4 cup brown sugar 2 tbl vegetable oil 1/2 tsp onion powder 1/2 tsp liquid smoke (hickory) 1 clove garlic 1/4 tsp salt 1/4 tsp coarse ground black pepper 8 kaiser rolls 1. make the marinated cabbage at least one day prior to building your sandwiches. like cold slaw this garnish needs some time to develop in the ridge. Combine the vinegar and sugar in a medium bowl. Add teh cabbate, stir, cover the bowl and store it in the fridge until you are ready to make the sandwiches 2. Soak wood chips for at least 1 hour (I use wood chunks). Light charcoal (use indirect cooking method - coals around outside edge of grill or coals to one side, meat and pan of water to the other) 3. rub vegetable oil over surface of meat. sprinkle with rub. 5. place roast in center of grill and put lid on. Let pork cook for 3 to 4 hours or until internal terp reaches 175 to 180 degrees. 6. as pork cooks make sauce by combining sauce ingredients in meiup saucepan over medium/low heat. Let sauce simmer for 15-20 minutes, cover and remove from heat. 7. When pork is done allow it to cool until it can be handled (15 - 30 minutes). Tear meat along grain making bite size pieces. 8. put shredded pork in sauce pan over medium heat. Add 2 cups of the sauce to the pan and stir. Keep the rest of the sauce for later to serve on the side. cook the pork for 15 minutes or until heated. 9. Grill faces of rolls and stack about 1 cup of pork onto bottom half of each roll. Add a rounded tablespon or so of the extra sauce on top and cap off with tablespoon of cabbage. Good with hard rock baked beans.
