Today was eggplant day, and so it begins where I try new ideas, fry, grill, fill, roll, bake and so on to come up with some ways to eat and freeze the many eggplant my husband brings in from the garden. I made a traditional dish from my parents home town of Bari, Macaroni e melezane al forno, Baked Macaroni & Eggplant Casserole & Involtini di Melezane, 2 ways, a ricotta/spinach filling & the other, ham provolone cheese & basil, both for baking in the oven. I will supply the details of the recipe based on the picture. If you live nearby, please come over and get some eggplants, youd be doing me a favor, as I know were headed for at least 100 of them or more. Today I cooked 6 large ones, and Im done for tonight.
